Palacsinta (Hungarian Pancakes) are thin, delicate crepe-like pancakes that are a beloved dish in Hungary. They can be served sweet or savory, with a variety of fillings. Here’s a traditional recipe:
Ingredients:
- 2 cups (250g) all-purpose flour
- 2 large eggs
- 1 ½ cups (350ml) milk
- ½ cup (120ml) sparkling water or soda water (for lightness, optional)
- 1 tbsp sugar (for sweet palacsinta, omit for savory)
- 1 pinch of salt
- 1 tbsp melted butter or oil (plus extra for frying)
- Optional flavorings: vanilla extract, lemon zest, or a splash of rum
Filling & Topping Ideas:
- Sweet:
- Nutella, jam, or honey
- Ground walnuts or poppy seeds with sugar
- Sweetened cottage cheese or ricotta
- Cinnamon sugar & lemon juice
- Chocolate sauce & whipped cream
- Savory:
- Cheese & ham
- Mushroom & sour cream
- Spinach & feta
Instructions:
- Make the batter:
- Whisk eggs, milk, melted butter, sugar (if using), and salt in a bowl.
- Gradually add flour, mixing until smooth.
- Stir in sparkling water for a lighter texture.
- Let the batter rest for 20-30 minutes.
- Cook the palacsinta:
- Heat a non-stick pan over medium heat and lightly grease with butter or oil.
- Pour a small ladle of batter into the pan, swirling to coat thinly.
- Cook for 1-2 minutes until edges lift, then flip and cook briefly on the other side.
- Fill & Serve:
- Spread filling (e.g., jam, nuts, cheese) over the pancake and roll or fold.
- Dust with powdered sugar, drizzle with chocolate, or top with fruit.
Tip:
For a classic Hungarian dessert, try Gundel palacsinta—filled with walnuts, raisins, and rum, then topped with chocolate sauce.
