Ingredients:

  • 4 boneless pork chops (about 1-inch thick)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • 2 tbsp olive oil (or melted butter)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Coating: In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir until well mixed.
  3. Prepare the Pork Chops: In another shallow dish, beat the eggs. Dip each pork chop first into the beaten eggs, making sure to coat it evenly, then dredge it in the Parmesan-breadcrumb mixture, pressing lightly to adhere the coating to both sides of the pork chop.
  4. Bake: Place the coated pork chops on the prepared baking sheet. Drizzle with olive oil or melted butter to help them crisp up in the oven.
  5. Cooking Time: Bake for 25-30 minutes, or until the pork chops are golden brown and cooked through (internal temperature should reach 145°F). For an extra crispy coating, you can broil the pork chops for an additional 1-2 minutes at the end of the baking time, but keep a close eye to prevent burning.
  6. Serve: Remove from the oven and let rest for a few minutes before serving. Garnish with freshly chopped parsley if desired.

Tips:

  • If you prefer bone-in pork chops, you can use those as well. Just note that they may require a slightly longer cooking time.
  • For a more flavorful coating, add a bit of grated garlic or lemon zest to the breadcrumb mixture.
  • Serve with a side of roasted vegetables, mashed potatoes, or a crisp salad for a complete meal.
