Parmesan Chicken Stuffed Peppers Recipe

Ingredients

  • 4 large bell peppers (any color)
  • 2 cups cooked chicken, shredded (rotisserie chicken works well)
  • 1 cup cooked rice or quinoa
  • 1 cup marinara sauce (plus extra for topping)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Peppers:
    • Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. Make the Filling:
    • In a large bowl, combine the shredded chicken, cooked rice or quinoa, marinara sauce, mozzarella cheese, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined.
  4. Stuff the Peppers:
    • Fill each bell pepper with the chicken mixture, pressing down gently to pack it in. Top each pepper with a little extra marinara sauce and a sprinkle of mozzarella cheese.
  5. Bake:
    • Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.
  6. Serve:
    • Remove from the oven and let cool slightly. Garnish with fresh basil or parsley if desired.
