Peach Cobbler Egg Rolls 🍑🔥

A crunchy, gooey, cinnamon-spiced twist on classic peach cobbler—wrapped in a crispy egg roll and perfect with vanilla ice cream!


Ingredients:

Filling:

  • 2 cups peaches, finely diced (fresh or canned)

  • ¼ cup brown sugar

  • 1 tbsp lemon juice

  • 1 tsp cinnamon

  • ½ tsp vanilla extract

  • 1 tbsp cornstarch (to thicken)

Assembly:

  • 8-10 egg roll wrappers

  • 2 tbsp melted butter

  • 1 tbsp granulated sugar + ½ tsp cinnamon (for coating)

  • Oil for frying (or air fryer method)

For Serving:

  • Vanilla ice cream

  • Caramel drizzle (optional)


Instructions:

  1. Make the Filling:

    • In a saucepan, mix peaches, brown sugar, lemon juice, cinnamon, and vanilla. Cook over medium heat for 3-4 mins until bubbly.

    • Stir in cornstarch and cook 1-2 mins until thickened. Let cool slightly.

  2. Fill & Roll:

    • Place 1-2 tbsp filling in the center of an egg roll wrapper.

    • Fold sides in, then roll tightly (like a burrito). Seal edges with a dab of water.

  3. Cook:

    • Fried: Heat oil to 350°F (175°C), fry 2-3 mins per side until golden.

    • Air Fryer: Brush with butter, air fry at 375°F (190°C) for 6-8 mins, flipping halfway.

    • Baked: Brush with butter, bake at 400°F (200°C) for 12-15 mins until crispy.

  4. Cinnamon Sugar Coat:

    • Brush with melted butter, then roll in cinnamon sugar.

  5. Serve Warm:

    • Top with vanilla ice cream and caramel drizzle!


Pro Tips:

✔ Prevent sogginess: Let filling cool before wrapping.
✔ Extra crunch? Add crushed graham crackers to the filling.
✔ No peaches? Try apple pie filling or berries!
