Peaches and Cream Cake
A light, fluffy vanilla cake layered with fresh peaches and whipped cream frosting—perfect for summer!
Ingredients
For the Cake:
- 2 ½ cups (300g) all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- ½ cup (113g) unsalted butter, softened
- 1 ½ cups (300g) granulated sugar
- 3 large eggs, room temperature
- 1 tbsp vanilla extract
- 1 cup (240ml) whole milk, room temperature
- ½ cup (120g) sour cream (or Greek yogurt)
For the Filling & Topping:
- 3–4 ripe peaches, peeled & sliced (or 2 cups canned, drained)
- 1 tbsp lemon juice (to prevent browning)
- 2 tbsp granulated sugar (for macerating peaches)
- 1 tsp cinnamon (optional)
For the Whipped Cream Frosting:
- 2 cups (480ml) heavy cream, chilled
- ½ cup (60g) powdered sugar
- 1 tsp vanilla extract
Instructions
1. Prep the Peaches:
- Toss sliced peaches with lemon juice, sugar, and cinnamon (if using). Let sit 15+ mins to release juices.
2. Make the Cake:
- Preheat oven to 350°F (175°C). Grease & line two 8-inch round pans.
- Whisk flour, baking powder, and salt in a bowl.
- In another bowl, beat butter & sugar until fluffy (~3 mins). Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients with milk & sour cream, mixing just until combined.
- Divide batter evenly between pans. Bake 25–30 mins or until a toothpick comes out clean. Cool completely.
3. Whip the Cream:
- Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
4. Assemble the Cake:
- Place one cake layer on a plate. Spread with ½ the whipped cream and top with ½ the peaches.
- Add the second cake layer, then cover with remaining cream and peaches.
- Optional: Dust with powdered sugar or garnish with mint.
5. Chill & Serve:
- Refrigerate at least 1 hour before slicing.

✔ Use room temp ingredients for a fluffier cake.
✔ Drain excess peach juice to prevent sogginess.
✔ For a sturdier frosting, fold in ¼ cup mascarpone or cream cheese.
