Peanut Butter Cookie Bars

  1. 1 cup creamy peanut butter
  2. 1 cup granulated sugar
  3. 1 egg
  4. 1 1/2 cups all-purpose flour
  5. 1/2 teaspoon baking soda
  6. 1/2 teaspoon vanilla extract
  7. 1/4 teaspoon salt (optional)
  8. 1/2 cup chocolate chips (optional, but delicious!)

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.

  2. Mix wet ingredients: In a large bowl, combine the peanut butter, sugar, and egg. Mix well until smooth and creamy. Stir in the vanilla extract.

  3. Add dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the peanut butter mixture and stir until just combined. If you’re using chocolate chips, fold them in at this point.

  4. Spread into the baking dish: Spread the dough evenly into the prepared 8×8-inch baking dish.

  5. Bake: Bake for 20-25 minutes, or until the bars are golden brown on top and a toothpick inserted into the center comes out clean.

  6. Cool and slice: Allow the bars to cool completely in the pan before cutting them into squares.
