Buttery, caramelized pecan bars with a chewy-crisp texture—like a cross between pecan pie and a brown sugar cookie!

📝 Ingredients

Crust & Topping:

  • 1 cup (125g) all-purpose flour
  • ½ cup (100g) packed brown sugar
  • ½ cup (115g) cold unsalted butter, cubed

Pecan Filling:

  • 2 large eggs
  • 1 cup (200g) packed brown sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 ½ cups (150g) chopped pecans

Optional:

  • 1 tbsp bourbon or maple syrup (for depth)
  • Flaky sea salt for garnish

👩‍🍳 Instructions

1️⃣ Make the Crust

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment.
  2. In a bowl, mix flour and brown sugar. Cut in cold butter until crumbly.
  3. Press firmly into the pan. Bake 10 mins until lightly golden.

2️⃣ Prepare Filling

  1. Whisk eggs, brown sugar, vanilla, and salt until smooth.
  2. Stir in pecans (and bourbon if using).

3️⃣ Bake

  1. Pour filling over hot crust. Bake 15-20 mins until set at edges but slightly jiggly in center.
  2. Cool completely before slicing. Sprinkle with sea salt if desired.
