Here’s a delicious recipe for pecan pie bread pudding that combines the rich flavors of pecan pie with the comforting texture of bread pudding!

Ingredients:

For the Bread Pudding:

  • 6 cups day-old bread (such as challah, brioche, or French bread), cubed
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped (plus extra for topping)

For the Pecan Topping:

  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/4 cup butter, melted
  • 1 cup pecans, chopped

Instructions:

1. Prepare the Bread Pudding:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Combine Ingredients: In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, cinnamon, and salt until smooth.
  3. Add Bread and Pecans: Fold in the cubed bread and chopped pecans, ensuring the bread is well coated with the mixture. Let it sit for about 15-20 minutes to absorb the liquid.
  4. Bake: Pour the bread mixture into the prepared baking dish and spread it evenly. Bake for about 40-50 minutes, or until the top is golden and a knife inserted in the center comes out clean.

2. Prepare the Pecan Topping:

  1. In a medium bowl, mix together the maple syrup, brown sugar, melted butter, and chopped pecans.
  2. Add Topping: Once the bread pudding is done baking, remove it from the oven and sprinkle the pecan topping over the top.
  3. Bake Again: Return the dish to the oven and bake for an additional 10-15 minutes, or until the topping is bubbly and golden.

3. Serve:

  • Let the bread pudding cool slightly before serving. It’s delicious warm and can be served with whipped cream or vanilla ice cream!
