Pecan Pie Cheesecake Recipe

Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar

For the Cheesecake Filling:

  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ teaspoon salt

For the Pecan Pie Topping:

  • 1 cup pecans, chopped
  • ¾ cup brown sugar
  • ½ cup corn syrup
  • ¼ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (160°C).
  2. Make the Crust:
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then remove and let cool.
  3. Prepare the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
    • Add the vanilla extract and mix until combined.
    • Add the eggs one at a time, mixing on low speed after each addition.
    • Stir in the sour cream and salt until just combined.
  4. Pour the Filling:
    • Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.
  5. Bake the Cheesecake:
    • Bake in the preheated oven for about 50-60 minutes, or until the edges are set but the center is slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool gradually for about an hour.
  6. Prepare the Pecan Pie Topping:
    • In a bowl, mix together the chopped pecans, brown sugar, corn syrup, melted butter, eggs, and vanilla extract until well combined.
  7. Add the Topping:
    • After the cheesecake has cooled, pour the pecan pie topping over the cheesecake. Spread it evenly.
  8. Bake Again:
    • Return the cheesecake to the oven and bake for an additional 15-20 minutes, or until the topping is set.
  9. Cool and Chill:
    • Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  10. Serve:
    • Carefully remove the sides of the springform pan. Slice and enjoy your pecan pie cheesecake!
