Pecan Pie Muffins

Ingredients:

For the Muffins:

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup chopped pecans

For the Topping:

  • 1/4 cup brown sugar, packed
  • 1/4 cup chopped pecans
  • 1 tbsp unsalted butter, melted
  • 1 tbsp maple syrup (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  3. Combine the Wet Ingredients: In another bowl, mix the melted butter, eggs, vanilla extract, and milk until well combined.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped pecans.
  5. Prepare the Topping: In a small bowl, combine the brown sugar, chopped pecans, melted butter, and maple syrup (if using).
  6. Fill the Muffin Tin: Divide the muffin batter evenly among the muffin cups, filling each about 2/3 full. Sprinkle the topping mixture over each muffin.
  7. Bake: Bake for about 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for a few minutes before transferring to a wire rack.
  8. Serve: Enjoy warm or at room temperature. These muffins are great for breakfast, brunch, or as a sweet treat!

Tips:

  • For an extra touch, you can drizzle some caramel sauce over the muffins before serving.
  • Store any leftovers in an airtight container at room temperature for up to 3 days.
