Pimento Cheeseburger Hand Pies

Ingredients:

  • 1 lb ground beef
  • 1/2 cup pimento cheese (store-bought or homemade)
  • 1/4 cup diced pickles (optional)
  • 1/4 cup finely chopped onion
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 package refrigerated pie crusts (or homemade if preferred)
  • 1 egg (for egg wash)
  • 1 tablespoon water (for egg wash)

Instructions:

1. Cook the Ground Beef:

  • In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  • Add the diced onions, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Cook for another 2-3 minutes until the onions are softened.

2. Combine the Pimento Cheese:

  • Remove the skillet from heat and stir in the pimento cheese. If you’re using pickles, stir them in now as well. The mixture should be creamy and well combined.

3. Prepare the Hand Pies:

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Roll out the pie crusts on a flat surface. Use a round cutter or a bowl to cut out circles (about 4–5 inches in diameter).
  • Place a spoonful of the cheeseburger mixture in the center of each circle. Be careful not to overfill, as it could make sealing the hand pies difficult.

4. Seal the Pies:

  • Fold the pie crust over the filling to create a half-moon shape.
  • Press the edges of the crust together with a fork to seal, ensuring there’s no leakage while baking.

5. Egg Wash:

  • In a small bowl, whisk together the egg and water to create an egg wash.
  • Brush the tops of the hand pies with the egg wash to give them a golden, glossy finish.

6. Bake:

  • Place the hand pies on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the crusts are golden brown and crispy.

7. Serve:

  • Let the hand pies cool for a few minutes before serving. They are great on their own, or you can serve them with dipping sauces like ketchup, mustard, or ranch.

Optional Variations:

  • You can add some cooked bacon bits to the filling for extra flavor.
  • If you prefer, use store-bought puff pastry instead of pie crusts for a flakier texture.
