Ingredients:

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup crushed pineapple (with juice)
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup shredded coconut (optional)

Instructions:

  1. Preparation:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×5 inch loaf pan, or line it with parchment paper for easy removal.
  2. Mixing Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. Mixing Wet Ingredients:
    • In a separate bowl, beat the eggs.
    • Add the crushed pineapple with its juice, vegetable oil, and vanilla extract to the eggs. Mix well.
  4. Combining Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
    • If using, fold in the chopped nuts and shredded coconut.
  5. Baking:
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
    • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  6. Finishing:
