Ingredients:
- 2 cups all-purpose flour

- 1 cup crushed pineapple (with juice)
- 1/2 cup vegetable oil

- 1/2 cup shredded coconut (optional)
Instructions:
- Preparation:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5 inch loaf pan, or line it with parchment paper for easy removal.
- Mixing Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- Mixing Wet Ingredients:
- In a separate bowl, beat the eggs.
- Add the crushed pineapple with its juice, vegetable oil, and vanilla extract to the eggs. Mix well.
- Combining Ingredients:
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- If using, fold in the chopped nuts and shredded coconut.
- Baking:
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
