Pineapple Cream Cheese Pie

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 (8 oz) container whipped topping (like Cool Whip)
  • 1 (20 oz) can crushed pineapple, drained
  • 1 teaspoon vanilla extract

Instructions:

1. Prepare the Crust:

  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined and the crumbs are evenly coated with butter.
  • Press the mixture into the bottom of a 9-inch pie dish to form an even crust. Use the back of a spoon to press it firmly into place.
  • Bake the crust at 350°F (175°C) for about 8-10 minutes, or until golden brown. Remove from the oven and let it cool completely.

2. Make the Filling:

  • In a large mixing bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy.
  • Add the whipped topping and vanilla extract, and continue to mix until fully incorporated.
  • Gently fold in the drained crushed pineapple, making sure it’s evenly mixed throughout the filling.

3. Assemble the Pie:

  • Once the graham cracker crust has cooled, spread the pineapple cream cheese filling evenly over the crust.
  • Smooth the top with a spatula for a nice, even surface.

4. Chill the Pie:

  • Refrigerate the pie for at least 4 hours, or until it is well chilled and the filling has set. For best results, chill it overnight.

5. Serve:

  • Once chilled, slice and serve! You can optionally garnish the pie with extra whipped topping, pineapple chunks, or a sprinkle of shredded coconut for added texture.

Tips:

  • Crust Variations: You can use a store-bought graham cracker crust if you’re short on time.
  • Make it a Tropical Twist: Add a few extra tropical fruits like chopped mango or kiwi to the filling for more fruitiness.
