Pineapple Heaven Cheesecake is a tropical, creamy dream come true! This no-bake cheesecake combines a buttery graham cracker crust, a luscious pineapple-infused filling, and a topping of caramelized pineapple or whipped cream for the ultimate indulgence. 🍍✨

Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup (1 stick) unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz (2 blocks) cream cheese, softened

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • 8 oz crushed pineapple, well-drained (reserve juice)

  • 1 tbsp reserved pineapple juice (for flavor)

  • 8 oz whipped topping (Cool Whip) or homemade whipped cream

For the Topping (Choose One or Both!):

  • Caramelized Pineapple:

    • 1 cup fresh pineapple chunks

    • 2 tbsp brown sugar

    • 1 tbsp butter

  • Whipped Cream & Toasted Coconut:

    • ½ cup heavy cream + 1 tbsp sugar (whipped)

    • ¼ cup toasted coconut flakes

Instructions

1. Make the Crust:

  • Mix graham cracker crumbs, sugar, and melted butter.

  • Press firmly into a 9-inch springform pan or pie dish.

  • Chill in the fridge for 30 minutes.

2. Prepare the Filling:

  • Beat cream cheese until smooth.

  • Add powdered sugar, vanilla, and reserved pineapple juice; mix well.

  • Fold in drained crushed pineapple.

  • Gently fold in whipped topping until fully combined.

  • Spread over the chilled crust and smooth the top.

3. Add the Topping:

  • Caramelized Pineapple Option:

    • In a skillet, melt butter, add pineapple and brown sugar.

    • Cook until golden and caramelized (~5 min). Cool before topping the cheesecake.

  • Whipped Cream & Coconut Option:

    • Whip heavy cream with sugar until stiff peaks form.

    • Spread over cheesecake and sprinkle with toasted coconut.

4. Chill & Serve:

  • Refrigerate for at least 4 hours (overnight is best).

  • Slice and enjoy your tropical paradise in every bite!

Tips:

  • For extra pineapple flavor, add a layer of pineapple jam between the crust and filling.

  • Make it boozy with a splash of coconut or pineapple rum in the filling!

  • No fresh pineapple? Canned works too—just drain well.
