Here’s a simple and delicious recipe for homemade pineapple pie:

Ingredients

For the Filling:

  • 1 can (20 oz) crushed pineapple (including juice)
  • ½ cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • ¼ tsp salt (optional)

For the Pie Crust:

  • 2 pre-made pie crusts (store-bought or homemade)
    Or make your own:

    • 2 ½ cups all-purpose flour
    • 1 tsp salt
    • 1 cup unsalted butter, chilled and cubed
    • 6-8 tbsp ice water

Optional for Topping:

  • 1 egg, beaten (for egg wash)
  • 2 tbsp granulated sugar (for sprinkling)

Instructions

1. Prepare the Crust (if making homemade):

  1. In a large bowl, combine the flour and salt.
  2. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, mixing just until the dough comes together.
  4. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

2. Make the Filling:

  1. In a medium saucepan, combine the crushed pineapple (with juice), sugar, cornstarch, lemon juice, and salt.
  2. Cook over medium heat, stirring constantly, until the mixture thickens (about 5-7 minutes). Remove from heat and let cool.

3. Assemble the Pie:

  1. Preheat your oven to 375°F (190°C).
  2. Roll out one pie crust and fit it into a 9-inch pie pan.
  3. Pour the cooled pineapple filling into the crust.
  4. Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal.
    • Optionally, create a lattice top or cut decorative slits for steam to escape.

4. Add the Finishing Touch:

  1. Brush the top crust with beaten egg and sprinkle with sugar for a golden, shiny finish.

5. Bake:

  1. Place the pie on the middle rack and bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  2. If the edges brown too quickly, cover them with aluminum foil.

6. Cool and Serve:

  • Allow the pie to cool for at least 1 hour before slicing to let the filling set.
  • Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Tips:

  • Use fresh pineapple for a tropical twist: finely chop 2 cups of fresh pineapple and cook it the same way.
  • Add a pinch of cinnamon or nutmeg to the filling for extra warmth and depth of flavor.
