Preparation Time:
- Prep Time: 15 minutes
- Freezing Time: 2 hours
- Total Time: 2 hours 15 minutes
Difficulty Level:
- Easy
Ingredients:
- 4 cups frozen pineapple chunks
- 1/2 cup coconut milk (or any milk of choice)
- 2 tbsp honey or agave syrup (optional, for added sweetness)
- 1 tsp vanilla extract
- Fresh mint leaves (for garnish, optional)
Instructions:
- Prepare the Pineapple:
- If not using pre-frozen pineapple chunks, cut a fresh pineapple into chunks and freeze them for at least 2 hours or until completely frozen.
- Blend the Ingredients:
- In a high-speed blender or food processor, combine the frozen pineapple chunks, coconut milk, honey or agave syrup (if using), and vanilla extract.
- Blend until smooth and creamy, stopping to scrape down the sides as needed. This may take a few minutes depending on your blender’s power.
- Adjust Consistency:
- If the mixture is too thick, add a little more coconut milk, 1 tablespoon at a time, until the desired consistency is reached.
- Serve Immediately:
- Scoop the pineapple soft serve into bowls or cones.
- Garnish with fresh mint leaves if desired.
- Optional Freezing:
- For a firmer texture, transfer the soft serve to an airtight container and freeze for an additional 30 minutes to 1 hour before serving.
