Pineapple Upside-Down Sugar Cookies

These Pineapple Upside-Down Sugar Cookies combine the classic dessert with a fun cookie twist. Sweet caramelized pineapple and maraschino cherries sit atop a soft sugar cookie base for a delightful, bite-sized treat.


Ingredients

For the Topping:

  • 1/4 cup unsalted butter, melted
  • 1/3 cup light brown sugar, packed
  • 8–10 pineapple rings (cut into smaller pieces to fit cookies)
  • 8–10 maraschino cherries

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a muffin tin lightly or line it with parchment paper circles.
  2. Prepare the Topping:
    • In a small bowl, mix the melted butter and brown sugar.
    • Spoon about 1 teaspoon of the mixture into the bottom of each muffin cup.
    • Place a small piece of pineapple and a maraschino cherry on top of the brown sugar mixture.
  3. Make the Cookie Dough:
    • In a large mixing bowl, cream the butter and sugar together until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.
    • In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  4. Assemble:
    • Scoop about 1 1/2 tablespoons of cookie dough and press it gently on top of the pineapple and cherry in each muffin cup.
  5. Bake:
    • Bake for 12–15 minutes, or until the edges of the cookies are lightly golden.
    • Remove from the oven and let the cookies cool in the tin for about 5 minutes.
  6. Flip and Serve:
    • Carefully run a knife around the edges of each cookie. Place a baking sheet or large plate over the muffin tin and invert to release the cookies.
    • Serve warm or at room temperature.

Tips:

  • For a tropical twist, add a splash of coconut extract to the cookie dough.
  • Store leftovers in an airtight container for up to 2 days.
