Here’s a simple and delicious recipe for poached eggs on toast, perfect for breakfast or a light meal!

Poached Eggs on Toast Recipe

Ingredients:

  • 2 large eggs
  • 2 slices of bread (your choice: sourdough, whole grain, etc.)
  • 1 tablespoon white vinegar (optional, helps with poaching)
  • Salt and pepper, to taste
  • Fresh herbs (like chives or parsley) for garnish (optional)
  • Butter or olive oil (for spreading on toast)

Instructions:

1. Prepare the Bread:

  • Toast the slices of bread until golden brown. Spread with butter or drizzle with olive oil, if desired.

2. Poach the Eggs:

  • Fill a medium saucepan with water and bring it to a gentle simmer over medium heat. If using, add the vinegar to the water.
  • Crack one egg into a small bowl or cup. Create a gentle whirlpool in the simmering water by stirring it with a spoon.
  • Carefully slide the egg into the center of the whirlpool. Cook for about 3-4 minutes for a runny yolk or longer if you prefer a firmer yolk.
  • Use a slotted spoon to carefully remove the poached egg from the water and place it on a paper towel to drain excess water.
  • Repeat with the second egg.

3. Assemble:

  • Place the toasted bread on plates. Top each slice with a poached egg. Season with salt and pepper to taste.

4. Garnish:

  • Sprinkle with fresh herbs, if desired.
