Ingredients

For the Pork Schnitzel:

  • 4 boneless pork chops (about 1/2 inch thick)
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1/4 cup vegetable oil (for frying)

For the Dijon Gravy:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 1/4 cup heavy cream (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Pork:
    • Place each pork chop between two pieces of plastic wrap. Use a meat mallet or rolling pin to pound them to about 1/4 inch thick. Season both sides with salt and pepper.
  2. Set Up Breading Station:
    • Place the flour, beaten eggs, and breadcrumbs in three separate shallow dishes.
  3. Bread the Pork:
    • Dredge each pork chop in flour, shaking off the excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing lightly to adhere.
  4. Fry the Schnitzel:
    • In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded pork chops in batches, cooking for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
  5. Make the Dijon Gravy:
    • In the same skillet, reduce the heat to medium and melt the butter. Stir in the flour, cooking for about 1 minute to create a roux.
    • Gradually whisk in the chicken broth, stirring constantly until smooth. Add the Dijon mustard and heavy cream (if using). Simmer for a few minutes until thickened. Season with salt and pepper to taste.
  6. Serve:
    • Plate the schnitzel and drizzle with the Dijon gravy. Garnish with chopped parsley.

Tips

  • Serve with mashed potatoes, roasted vegetables, or a simple salad for a complete meal.
  • You can also add a squeeze of lemon over the schnitzel for extra brightness.
