Potato Corn Soup Recipe

Ingredients:

  • 4 medium potatoes, peeled and diced
  • 2 cups corn (fresh, frozen, or canned)
  • 1 medium onion, chopped
  • 2-3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream (for a richer soup)
  • 2 tablespoons butter or olive oil
  • Salt and pepper to taste
  • Optional: chopped fresh chives or parsley for garnish

Instructions:

  1. Sauté Vegetables:
    • In a large pot, heat the butter or olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute.
  2. Add Potatoes and Corn:
    • Stir in the diced potatoes and corn. Cook for an additional 2-3 minutes.
  3. Add Broth:
    • Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Blend (Optional):
    • For a creamier texture, you can use an immersion blender to blend part of the soup or transfer a portion to a blender and puree it. Return it to the pot.
  5. Add Milk/Cream:
    • Stir in the milk or cream and heat through. Season with salt and pepper to taste.
  6. Serve:
    • Ladle the soup into bowls and garnish with fresh chives or parsley if desired.

Tips:

  • Feel free to add herbs like thyme or dill for extra flavor.
  • This soup can be easily customized with other vegetables, such as carrots or bell peppers.
