Potato Knish Casserole Recipe

Ingredients:

For the Filling:

  • 4 large potatoes (peeled and cubed)
  • 1 large onion (finely chopped)
  • 2 tablespoons butter or olive oil
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (optional)

For the Dough/Crust:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup warm water

For Topping (Optional):

  • 1 egg (beaten, for egg wash)
  • Sesame seeds or poppy seeds (for garnish)

Instructions:

  1. Prepare the Filling:
    • Boil the potatoes in salted water until tender (about 15-20 minutes). Drain and mash them until smooth.
    • In a skillet, heat the butter or olive oil over medium heat. Sauté the chopped onion until golden brown and caramelized (about 10 minutes).
    • Mix the caramelized onions into the mashed potatoes. Add salt, pepper, garlic powder, and paprika. Set aside.
  2. Prepare the Dough:
    • In a large bowl, mix the flour and salt. Add the vegetable oil and warm water, and stir until a dough forms.
    • Knead the dough lightly on a floured surface until smooth. Roll it out into a rectangle or circle, depending on the shape of your baking dish.
  3. Assemble the Casserole:
    • Preheat your oven to 375°F (190°C).
    • Press the dough into the bottom and sides of a greased baking dish (9×13 inches works well).
    • Spread the potato filling evenly over the dough.
    • If desired, roll out any remaining dough and place it on top of the filling, or create a lattice pattern.
    • Brush the top with beaten egg and sprinkle with sesame or poppy seeds for a golden, crunchy finish.
  4. Bake:
    • Bake in the preheated oven for 30-40 minutes, or until the crust is golden brown and the filling is heated through.
  5. Serve:
    • Let the casserole cool slightly before slicing. Serve warm as a main dish or side.
