Potatoes with Meatballs and Cheese Recipe

Ingredients:

  • For the Meatballs:
    • 1 pound ground beef (or turkey)
    • 1/2 cup breadcrumbs
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
    • 2 cloves garlic, minced
    • 1 teaspoon Italian seasoning
    • Salt and pepper, to taste
  • For the Potatoes:
    • 4 large potatoes, peeled and cut into cubes
    • 2 tablespoons olive oil
    • Salt and pepper, to taste
    • 1 teaspoon garlic powder
    • 1 teaspoon paprika
  • For Assembly:
    • 2 cups shredded cheese (cheddar, mozzarella, or your favorite)
    • 1/4 cup fresh parsley, chopped (for garnish, optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2. Make the Meatballs:

  • In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined.
  • Form the mixture into meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

3. Bake the Meatballs:

  • Bake the meatballs in the preheated oven for about 20-25 minutes, or until cooked through and browned.

4. Prepare the Potatoes:

  • While the meatballs are baking, toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika in a large bowl. Spread them out on another baking sheet in a single layer.

5. Roast the Potatoes:

  • Roast the potatoes in the oven for about 25-30 minutes, or until they are tender and golden brown, flipping halfway through.

6. Combine:

  • Once the meatballs and potatoes are done, combine them in a large baking dish. Sprinkle the shredded cheese evenly over the top.

7. Bake Again:

  • Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

8. Serve:

  • Garnish with fresh parsley if desired and serve warm.
