Protein Cookies Recipe

Ingredients:

  • 1 cup creamy peanut butter (or almond butter)
  • 1/2 cup protein powder (vanilla or chocolate)
  • 1/2 cup old-fashioned oats (or oat flour)
  • 1/4 cup honey or maple syrup
  • 1 large egg

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

  2. Mix the Wet Ingredients:
    In a large mixing bowl, combine the creamy peanut butter (or almond butter) and honey (or maple syrup). Stir until smooth and well combined. Then, add the egg and mix until the batter is evenly incorporated.

  3. Add the Dry Ingredients:
    To the same bowl, add the protein powder and oats (or oat flour). Stir everything together until the dough forms. It may be a little thick, but that’s okay! If you’re using oat flour, you might want to adjust with a bit more honey or water if the dough feels too dry.

  4. Scoop the Cookies:
    Using a spoon or cookie scoop, portion out the dough into small balls (about 1-2 tablespoons each) and place them onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon or your fingers, as they won’t spread much while baking.

  5. Bake the Cookies:
    Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. Keep an eye on them, as baking times may vary depending on your oven.

  6. Cool and Enjoy:
    Once baked, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. These cookies will stay soft and chewy as they cool.
