Pumpkin Cream Cheese Swirl Muffins 🎃🍂

These ultra-moist pumpkin muffins feature a rich cream cheese swirl and a buttery streusel topping for the perfect balance of sweet, spiced, and tangy. Ideal for fall breakfasts or cozy coffee breaks!


Ingredients

For the Muffins:

  • 1¾ cups (220g) all-purpose flour

  • 1 tsp baking soda

  • 1 tsp pumpkin pie spice (or ½ tsp cinnamon + ¼ tsp nutmeg + ¼ tsp ginger)

  • ½ tsp salt

  • 1 cup (225g) canned pumpkin puree (not pie filling)

  • ½ cup (100g) granulated sugar

  • ½ cup (110g) brown sugar, packed

  • ½ cup (120ml) vegetable oil (or melted coconut oil)

  • 2 large eggs, room temp

  • 1 tsp vanilla extract

For the Cream Cheese Swirl:

  • 4 oz (115g) cream cheese, softened

  • ¼ cup (30g) powdered sugar

  • ½ tsp vanilla extract

For the Streusel Topping (Optional but Worth It!):

  • ¼ cup (30g) flour

  • 2 tbsp brown sugar

  • 1 tbsp granulated sugar

  • ½ tsp cinnamon

  • 2 tbsp cold butter, cubed


Instructions

1️⃣ Prep: Preheat oven to 375°F (190°C). Line a muffin tin with liners or grease well.

2️⃣ Make the Cream Cheese Swirl:

  • Beat cream cheese, powdered sugar, and vanilla until smooth. Set aside.

3️⃣ Make the Streusel (If Using):

  • Mix flour, sugars, and cinnamon. Cut in cold butter until crumbly.

4️⃣ Mix Dry Ingredients:

  • Whisk flour, baking soda, pumpkin spice, and salt in a bowl.

5️⃣ Mix Wet Ingredients:

  • In another bowl, whisk pumpkin, sugars, oil, eggs, and vanilla until smooth.

6️⃣ Combine:

  • Gently fold dry ingredients into wet until just combined (don’t overmix!).

7️⃣ Layer & Swirl:

  • Fill muffin cups ½ full with batter.

  • Add 1 tsp cream cheese mixture to each, then top with more batter.

  • Swirl with a toothpick and sprinkle with streusel.

8️⃣ Bake:

  • Bake 18-22 mins until a toothpick comes out clean. Cool 5 mins in the pan, then transfer to a rack.

  • Room Temp Ingredients: Ensures smooth mixing.

  • Don’t Overbake: Keeps muffins moist!

  • Storage: Keep in an airtight container for 3 days or freeze for up to 1 month.
