🥩🧀 Queso Steak Fajita Skillet

📝 Ingredients

For the Fajitas:

  • 1 lb top sirloin, thinly sliced

  • ½ yellow onion, sliced

  • 3 bell peppers (mix colors), sliced

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp cumin

  • ½ tsp garlic powder

  • ½ tsp smoked paprika

  • Salt & pepper to taste

For the Queso Sauce:

  • 2 cups chicken broth

  • 8 oz tomato sauce

  • 1 cup shredded cheddar (or Monterey Jack)

  • ½ cup heavy cream (or evaporated milk)

  • 1 tbsp cornstarch (to thicken)

  • 1 jalapeño, diced (optional)

For Serving:

  • Warm tortillas

  • Fresh cilantro, lime wedges, sour cream


🔥 Instructions

1️⃣ Sear the Steak

  1. Heat 1 tbsp oil in a cast-iron skillet over high heat.

  2. Add steak in a single layer; sprinkle with salt, pepper, and half the spices. Sear 2 mins per side, then remove.

2️⃣ Sauté Veggies

  1. In the same skillet, add remaining oil, onions, and bell peppers.

  2. Sprinkle with remaining spices; cook 5 mins until charred but crisp-tender.

3️⃣ Make Queso Sauce

  1. Pour chicken broth and tomato sauce into the skillet. Simmer 5 mins.

  2. Whisk cornstarch into cream, then stir into the skillet.

  3. Add cheese and jalapeño (if using); melt until creamy.

4️⃣ Combine & Serve

  1. Return steak to the skillet; toss in queso sauce.

  2. Garnish with cilantro and serve with tortillas for dipping.
