Quick Cinnamon & Cardamom Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (or plain yogurt)
  • 1/4 cup milk

For the Topping:

  • 2 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan (or an 8×8-inch square pan).

2. Mix the dry ingredients:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, cardamom, and salt. Set aside.

3. Cream the butter and sugar:

  • In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 2-3 minutes.

4. Add the wet ingredients:

  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Add the sour cream (or yogurt) and milk, mixing until smooth.

5. Combine dry and wet ingredients:

  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

6. Pour the batter into the pan:

  • Pour the batter into the prepared cake pan and smooth the top with a spatula.

7. Prepare the topping:

  • In a small bowl, mix the melted butter, granulated sugar, and ground cinnamon.
  • Drizzle the cinnamon-sugar mixture over the top of the batter.

8. Bake the cake:

  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean and the cake is golden brown on top.

9. Cool and serve:

  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Once cooled, slice and enjoy!
