Quick Italian Cream Cake Recipe

This Quick Italian Cream Cake recipe delivers a moist, rich dessert with a creamy frosting. Perfect for celebrations or a cozy family dinner, it’s simple and quick to prepare while still tasting like a treat made from scratch.


Ingredients
For the Cake:

  • 1 box white or yellow cake mix
  • 1 cup buttermilk (substitute regular milk if needed)
  • 1/3 cup vegetable oil
  • 4 large eggs
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped pecans (optional)

For the Frosting:

  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans (for garnish)
  • Additional coconut for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans or line with parchment paper.
  2. Prepare the Cake Batter:
    • In a large bowl, mix the cake mix, buttermilk, vegetable oil, and eggs until smooth (follow package directions for mixing time).
    • Fold in the coconut and pecans, ensuring they are evenly distributed.
  3. Bake:
    • Divide the batter evenly among the prepared cake pans.
    • Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  4. Prepare the Frosting:
    • In a mixing bowl, beat the cream cheese and butter until creamy and well combined.
    • Gradually add the powdered sugar, one cup at a time, beating until smooth.
    • Mix in the vanilla extract.
  5. Assemble the Cake:
    • Place the first cake layer on a serving plate. Spread an even layer of frosting on top.
    • Repeat with the second and third layers. Frost the top and sides of the cake.
  6. Garnish:
    • Press chopped pecans and/or coconut onto the sides and sprinkle on top for decoration.
  7. Chill and Serve:
    • Refrigerate the cake for at least an hour before serving to set the frosting.

Tips:

  • For extra flavor, lightly toast the pecans and coconut before adding them to the cake or as a garnish.
  • This cake is best served slightly chilled.
