2 lbs (1 kg) potatoes (waxy type, like Yukon Gold)

4 large eggs, hard-boiled & sliced

10 oz (300g) smoked sausage (Hungarian kolbász or kielbasa), sliced

1 large onion, finely chopped

1 ½ cups (350ml) sour cream

½ cup (120ml) heavy cream (or milk)

1 tsp sweet paprika

1 tsp salt

½ tsp black pepper

1 tbsp butter (for greasing)

½ cup (50g) breadcrumbs (optional, for crunch)

1️⃣ Prep the Potatoes

Boil unpeeled potatoes until just tender (20-25 mins). Cool, peel, and slice into ¼-inch rounds.
2️⃣ Sauté the Onion & Sausage

In a pan, cook onion in a little oil until soft. Add sliced sausage and paprika; cook 2 mins.
3️⃣ Layer the Casserole (Like a Hungarian lasagna!)

Grease a 9×13-inch baking dish with butter. Layer in this order:

1/3 potatoes → salt & pepper

1/2 sausage & onion → 1/2 sliced eggs → 1/2 sour cream mixture

Repeat layers, ending with potatoes on top.
