Rakott Krumpli (Hungarian Layered Potato Casserole)

A comforting, hearty dish of sliced potatoes, creamy sour cream, eggs, and sausage, baked to golden perfection. A staple of Hungarian home cooking!


🍽️ Ingredients *(Serves 6-8)*

  • 2 lbs (1 kg) potatoes (waxy type, like Yukon Gold)

  • 4 large eggs, hard-boiled & sliced

  • 10 oz (300g) smoked sausage (Hungarian kolbász or kielbasa), sliced

  • 1 large onion, finely chopped

  • 1 ½ cups (350ml) sour cream

  • ½ cup (120ml) heavy cream (or milk)

  • 1 tsp sweet paprika

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tbsp butter (for greasing)

  • ½ cup (50g) breadcrumbs (optional, for crunch)


👩‍🍳 Instructions

1️⃣ Prep the Potatoes

  • Boil unpeeled potatoes until just tender (20-25 mins). Cool, peel, and slice into ¼-inch rounds.

2️⃣ Sauté the Onion & Sausage

  • In a pan, cook onion in a little oil until soft. Add sliced sausage and paprika; cook 2 mins.

3️⃣ Layer the Casserole (Like a Hungarian lasagna!)

  • Grease a 9×13-inch baking dish with butter. Layer in this order:

    • 1/3 potatoes → salt & pepper

    • 1/2 sausage & onion → 1/2 sliced eggs → 1/2 sour cream mixture

    • Repeat layers, ending with potatoes on top.

  • Mix sour cream + heavy cream, then spread over final layer. Sprinkle with breadcrumbs (if using).

4️⃣ Bake

  • Cover with foil; bake at 375°F (190°C) for 30 mins. Uncover, bake 15-20 mins until golden.

5️⃣ Rest & Serve

  • Let sit 10 mins before slicing. Garnish with extra paprika and fresh parsley.

  • Vegetarian? Skip sausage, add sautéed mushrooms or cheese.

  • Extra Creamy? Add 1 cup grated cheese (Trappist or Edam) between layers.

  • Make Ahead: Assemble, refrigerate overnight, then bake.
