Swedish Nut Cake Recipe

Ingredients:

For the cake:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup finely chopped mixed nuts (walnuts, almonds, or hazelnuts work well)

For the icing:

  • 1 cup powdered sugar
  • 1 tablespoon milk (or more for consistency)
  • ½ teaspoon vanilla extract
  • 1 tablespoon butter (optional, for a richer flavor)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper.

  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. Prepare the wet ingredients: In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Combine the wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with sour cream, beginning and ending with the flour mixture. Mix until just combined.

  5. Fold in the nuts: Gently fold the chopped nuts into the batter.

  6. Bake: Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  7. Cool: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. Prepare the icing: In a small bowl, mix together the powdered sugar, milk, vanilla extract, and butter (if using). Stir until smooth and drizzle over the cooled cake.

  9. Serve and enjoy: Once the icing has set, slice the cake and enjoy with a cup of coffee or tea.

Tips:

  • You can use a mix of your favorite nuts for a custom flavor.
  • This cake pairs wonderfully with whipped cream or a scoop of vanilla ice cream.
  • For added flavor, you could also add a teaspoon of almond extract to the batter.
