For the Red Lentil Wraps:

  • 1 cup red lentils
  • 2 1/2 cups water
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

For the Filling (optional):

  • Fresh vegetables (e.g., lettuce, tomatoes, cucumbers, bell peppers)
  • Cooked protein (e.g., grilled chicken, tofu, or chickpeas)
  • Sauces and spreads (e.g., hummus, tzatziki, or avocado spread)

Instructions:

1. Prepare the Red Lentil Wraps:

  1. Rinse Lentils: Rinse the red lentils under cold water until the water runs clear.
  2. Cook Lentils: In a medium saucepan, combine the lentils and water. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the lentils are tender and the water has mostly evaporated.
  3. Blend Lentils: Transfer the cooked lentils to a blender or food processor. Add the salt, cumin, paprika, garlic powder, and black pepper. Blend until smooth.
  4. Cook Wraps:
    • Heat a non-stick skillet over medium heat.
    • Pour 1/4 cup of the lentil mixture into the skillet and spread it out with the back of a spoon to form a thin, even layer.
    • Cook for about 2-3 minutes, or until the edges start to lift and the bottom is golden brown. Flip and cook the other side for another 1-2 minutes.
    • Repeat with the remaining mixture, adding more oil to the skillet if necessary.

2. Assemble the Wraps:

  1. Prepare Fillings: While the wraps are cooking, prepare your desired fillings. Wash and chop the vegetables, and cook any proteins if needed.
  2. Fill the Wraps: Spread your chosen sauce or spread over the cooked wraps. Add your vegetables and protein.
  3. Roll and Serve: Roll up the wraps tightly, slice in half if desired, and serve immediately. You can also wrap them in parchment paper for a portable meal.
