Ingredients:

Dry Ingredients:

  • 1 ½ cups (190g) all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

Wet Ingredients:

  • 3 very ripe bananas, mashed (~1 ½ cups)

  • ½ cup (120g) creamy peanut butter

  • ½ cup (100g) brown sugar

  • ¼ cup (50g) granulated sugar

  • 1 large egg, room temperature

  • ¼ cup (60ml) vegetable oil or melted butter

  • 1 tsp vanilla extract

Mix-Ins:

  • 1 cup chopped Reese’s peanut butter cups (mini or regular), plus extra for topping

  • ½ cup chocolate chips (optional)

Instructions:

  1. Prep:

    • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

  2. Mix Dry Ingredients:

    • In a bowl, whisk flour, baking soda, and salt. Set aside.

  3. Combine Wet Ingredients:

    • In another bowl, mix mashed bananas, peanut butter, sugars, egg, oil, and vanilla until smooth.

  4. Fold Together:

    • Gradually add dry ingredients to wet, stirring until just combined (don’t overmix).

    • Gently fold in chopped Reese’s cups and chocolate chips.

  5. Bake:

    • Pour batter into the loaf pan. Top with extra Reese’s pieces.

    • Bake for 55-65 minutes, or until a toothpick inserted comes out clean (cover with foil if top browns too quickly).

  6. Cool & Serve:

    • Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice once fully cooled.

Tips:

  • Ripe Bananas: The spottier, the sweeter!

  • Peanut Butter: Use natural PB for a stronger flavor, but avoid oily varieties.

  • Storage: Keeps for 3 days at room temp (wrap tightly) or freeze for up to 2 months.
