Refreshing Tomato and Artichoke Salad with Capers

A vibrant, tangy Mediterranean salad bursting with bright flavors—perfect as a side dish or light lunch! Ready in 10 minutes.


INGREDIENTS

  • 1 pint cherry tomatoes, halved

  • 1 (14 oz) can artichoke hearts, drained and quartered

  • 2 tbsp capers, drained

  • ¼ red onion, thinly sliced

  • 2 tbsp extra virgin olive oil

  • 1 tbsp red wine vinegar

  • 1 tsp Dijon mustard

  • Salt & freshly cracked black pepper to taste

  • Optional add-ins:

    • Fresh basil or parsley, chopped

    • Kalamata olives, pitted

    • Crumbled feta cheese

    • Lemon zest for brightness


INSTRUCTIONS

1. Combine the Salad:

In a large bowl, gently toss together:

  • Tomatoes, artichokes, capers, and red onion.

2. Make the Dressing:

In a small jar, whisk together:

  • Olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
    (Shake well to emulsify!)

3. Assemble & Serve:

  • Drizzle dressing over the salad and toss lightly.

  • Garnish with fresh herbs, olives, or feta if desired.

  • Let sit for 5-10 minutes before serving to let flavors meld.
