Ribeye Steak

Ingredients:
- 2 ribeye steaks (about 1 inch thick)
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 3 cloves garlic, smashed
- 4 sprigs fresh thyme
- 2 tbsp unsalted butter
Instructions:
- Prepare the Steaks:
- Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels.
- Season the Steaks:
- Drizzle both sides of the steaks with olive oil. Season generously with salt and freshly ground black pepper.
- Preheat the Skillet:
- Preheat a cast-iron skillet or heavy-bottomed pan over high heat until it’s very hot, about 5 minutes.
- Cook the Steaks:
- Add the steaks to the hot skillet. Cook for 4-5 minutes on the first side without moving them, to get a nice sear.
- Flip the steaks and add the smashed garlic, thyme, and butter to the pan.
- Use a spoon to baste the steaks with the melted butter and garlic-thyme mixture as they cook for an additional 4-5 minutes for medium-rare. Adjust the cooking time to your preferred level of doneness.
- Check for Doneness:
- Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and 150°F (66°C) for medium-well.
- Rest the Steaks:
- Transfer the steaks to a cutting board and let them rest for 5-10 minutes. This allows the juices to redistribute throughout the meat.
- Serve:
- Slice the steaks against the grain and serve with your favorite sides.
