Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt

- 3/4 cup brown sugar, packed
- 2 large eggs, beaten
- 1/3 cup plain Greek yogurt or sour cream
- 1 tsp vanilla extract
- 2 cups mashed overripe bananas (about 4-5 bananas)
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup chocolate chips (optional)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, cream the butter and brown sugar together with an electric mixer until light and fluffy, about 2-3 minutes.
- Add Eggs and Yogurt: Beat in the eggs one at a time, then add the Greek yogurt (or sour cream) and vanilla extract. Mix until well combined.
- Add Bananas: Stir in the mashed bananas until evenly distributed in the batter.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. If using, fold in the chopped nuts and chocolate chips.
- Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Serve: Slice and serve. Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
