Roasted Chicken Quarters Recipe

Ingredients

  • 4 chicken quarters (leg and thigh attached)
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1 teaspoon dried thyme (or your favorite herb)
  • Salt and pepper to taste
  • Lemon wedges (for serving)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Chicken:
    • Pat the chicken quarters dry with paper towels. This helps to achieve crispy skin.
  3. Season:
    • In a large bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, thyme, salt, and pepper.
    • Add the chicken quarters to the bowl and toss until they are well coated with the seasoning mixture.
  4. Arrange in a Baking Dish:
    • Place the seasoned chicken quarters skin-side up in a roasting pan or baking dish. Make sure they are spaced out for even cooking.
  5. Roast:
    • Roast in the preheated oven for about 40-50 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy. You can also broil for the last 2-3 minutes for extra crispiness, if desired.
  6. Serve:
    • Let the chicken rest for a few minutes before serving. Squeeze fresh lemon juice over the top and garnish with fresh herbs if desired.

Tips

  • You can add vegetables like potatoes, carrots, or onions around the chicken for a complete one-pan meal.
  • Adjust the seasoning based on your preferences—experiment with herbs and spices you enjoy!
