Poppy Seed Rolls

Ingredients:

For the Dough:

  • 3 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tsp salt
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1/2 cup milk
  • 1/4 cup water
  • 1/4 cup unsalted butter, softened
  • 2 large eggs

For the Poppy Seed Filling:

  • 1 cup poppy seeds
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/4 cup unsalted butter, softened

For the Egg Wash:

  • 1 large egg
  • 1 tbsp water

Instructions:

  1. Prepare the Dough:
    • In a small bowl, warm the milk and water until lukewarm (about 110°F or 43°C). Sprinkle the yeast over the liquid and let it sit for about 5 minutes until it becomes frothy.
    • In a large mixing bowl, combine the flour, sugar, and salt. Add the softened butter and mix until the mixture resembles coarse crumbs.
    • Add the yeast mixture and eggs to the dry ingredients. Mix until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.
    • Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  2. Prepare the Poppy Seed Filling:
    • In a saucepan, combine the poppy seeds, milk, sugar, honey, and vanilla extract. Cook over medium heat, stirring frequently, until the mixture thickens (about 5-7 minutes).
    • Remove from heat and stir in the softened butter until well combined. Let the filling cool to room temperature.
  3. Assemble the Rolls:
    • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
    • Punch down the risen dough and roll it out on a floured surface into a rectangle about 1/4 inch thick.
    • Spread the poppy seed filling evenly over the dough, leaving a small border around the edges.
    • Roll the dough up tightly from the long side to form a log. Cut the log into 12-15 equal slices and place them on the prepared baking sheet.
  4. Egg Wash:
    • In a small bowl, whisk together the egg and water. Brush the tops of the rolls with the egg wash.
  5. Bake the Rolls:
    • Bake the rolls in the preheated oven for 18-20 minutes, or until golden brown.
    • Remove from the oven and let them cool on a wire rack.
  6. Serve:
    • Enjoy the poppy seed rolls warm or at room temperature. They can be served as a delightful breakfast treat or an afternoon snack.
