Sausage and Cabbage Stew Recipe

Ingredients:

  • 1 lb Italian sausage (mild or spicy, depending on preference), casings removed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium cabbage, chopped
  • 4 cups chicken broth (or vegetable broth)
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (optional, for a tangy kick)
  • Fresh parsley for garnish (optional)

Instructions:

1. Cook the Sausage:

  • In a large pot or Dutch oven, heat olive oil over medium heat.
  • Add the Italian sausage and break it up with a spoon as it cooks. Cook for about 5-7 minutes until the sausage is browned and cooked through. Remove the sausage and set it aside.

2. Sauté the Vegetables:

  • In the same pot, add the chopped onion and minced garlic. Cook for 2-3 minutes, stirring occasionally, until the onion becomes translucent.
  • Add the carrots and potatoes, and cook for another 5 minutes, stirring occasionally.

3. Add Broth and Seasoning:

  • Pour in the chicken broth and stir in the dried thyme, paprika, black pepper, and salt.
  • Bring the mixture to a simmer, cover, and cook for about 15-20 minutes, or until the potatoes and carrots are tender.

4. Add Cabbage and Sausage:

  • Add the chopped cabbage and cooked sausage back into the pot. Stir everything to combine.
  • Cover and cook for an additional 10-15 minutes, or until the cabbage is tender.

5. Optional Final Touch:

  • If you like a little tang, stir in apple cider vinegar just before serving. This adds a slight acidity that complements the richness of the sausage and cabbage.

6. Serve:

  • Ladle the stew into bowls and garnish with fresh parsley if desired.
  • Serve with crusty bread on the side for a complete meal!

Tips:

  • Add more vegetables: You can add other vegetables like celery, bell peppers, or even zucchini to make the stew heartier and more colorful.
