Sausage Breakfast Muffins

Ingredients:

  • 1 lb (450g) breakfast sausage (pork, turkey, or chicken)
  • 6 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped vegetables (like bell peppers, onions, or spinach)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin (12-cup) or line it with paper liners.
  2. Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain excess fat and set aside to cool slightly.
  3. Mix Wet Ingredients: In a large bowl, whisk together the eggs, milk, and salt and pepper until well combined.
  4. Combine Dry Ingredients: In another bowl, mix the flour and baking powder.
  5. Combine Mixtures: Add the flour mixture to the egg mixture and stir until just combined. Fold in the cooked sausage, shredded cheese, and any optional vegetables.
  6. Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake: Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack. Serve warm or store in an airtight container.

Tips:

  • Storage: These muffins can be stored in the refrigerator for up to a week or frozen for up to 3 months.
  • Reheating: To reheat, simply microwave for about 30 seconds or warm in the oven.
