Sausage Summer Skillet

Ingredients:

  • 12 oz smoked sausage (andouille, kielbasa, or Italian), sliced into coins

  • 2 tbsp olive oil

  • 1 bell pepper (any color), diced

  • 1 zucchini or yellow squash, sliced

  • 1 cup cherry tomatoes, halved

  • 1 small red onion, sliced

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • ½ tsp dried oregano

  • ½ tsp red pepper flakes (optional, for heat)

  • Salt & black pepper to taste

  • 1 cup cooked quinoa, rice, or crusty bread (for serving)

  • Fresh herbs (basil, parsley, or thyme) for garnish

  • Optional: Feta or goat cheese for topping

Instructions:

  1. Brown the sausage: Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned (5-6 mins). Remove and set aside.

  2. Sauté veggies: In the same skillet, add onion, bell pepper, and zucchini. Cook 5 mins until softened.

  3. Add flavor: Stir in garlic, smoked paprika, oregano, red pepper flakes, salt, and pepper. Cook 1 min until fragrant.

  4. Combine: Return sausage to the skillet. Add cherry tomatoes and toss everything together. Cook 2-3 mins until tomatoes soften slightly.

  5. Serve: Spoon over quinoa, rice, or with crusty bread. Garnish with fresh herbs and cheese (if using).
