Savory Cabbage Pancakes Recipe

Ingredients (Makes 4–6 pancakes):

  • 3 cups green or Napa cabbage, finely shredded
  • 1 cup all-purpose flour (or gluten-free flour, if needed)
  • 1/4 cup water (or vegetable broth for extra flavor)
  • 2 large eggs
  • 1/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon soy sauce (optional, for added umami)
  • 1/4 cup green onions, finely chopped
  • 1/2 cup grated carrots (optional)
  • 1/2 cup cooked protein, such as shrimp, diced chicken, or tofu (optional)
  • Oil for frying (vegetable, canola, or sesame)

Optional Toppings:

  • Drizzle of mayonnaise
  • Drizzle of soy sauce or okonomiyaki sauce
  • Toasted sesame seeds
  • Additional chopped green onions
  • Bonito flakes (traditional for okonomiyaki)
  • Chili flakes or sriracha for a spicy kick

Instructions:

  1. Prepare the Batter:
    • In a large bowl, whisk together the flour, water, eggs, salt, pepper, and soy sauce (if using) until smooth.
    • Add the shredded cabbage, green onions, and carrots (or other desired vegetables). Mix well to coat all the vegetables evenly in the batter.
    • If adding protein, stir it in at this stage.
  2. Heat the Pan:
    • Heat 1–2 tablespoons of oil in a non-stick skillet or frying pan over medium heat.
  3. Cook the Pancakes:
    • Scoop about 1/2 cup of the cabbage mixture into the pan for each pancake. Flatten it slightly with the back of a spatula to form a round shape, about 1/2 inch thick.
    • Cook for 3–4 minutes on one side, until golden brown and crispy. Flip carefully and cook for another 3–4 minutes.
  4. Keep Warm (Optional):
    • If making multiple batches, keep the cooked pancakes warm in an oven set to 200°F (90°C) while you finish the rest.
  5. Serve:
    • Transfer to a plate and add your desired toppings. Serve hot!

Tips for Customization:

  • For extra crispiness, add 1–2 tablespoons of cornstarch to the batter.
  • Use savory sauces like hoisin, teriyaki, or even a tangy yogurt dip for variety.
  • For a heartier pancake, increase the amount of protein or add cheese to the batter.
