Ingredients:

  • 1 cup cottage cheese
  • 6 large eggs
  • 1/2 cup almond flour
  • 1/2 cup grated cheese (cheddar, mozzarella, or a mix)
  • 1/4 cup chopped spinach or herbs (like parsley, chives, or basil)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped bell peppers or other vegetables (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).
  • Grease or line a 12-cup muffin tin with paper liners.

2. Mix the Wet Ingredients:

  • In a large mixing bowl, whisk the eggs and cottage cheese together until smooth and well combined.
  • Add the grated cheese, chopped spinach or herbs, and any optional veggies (like bell peppers).

3. Add Dry Ingredients:

  • Stir in the almond flour, garlic powder, onion powder, salt, and black pepper. Mix until the batter is smooth and everything is well incorporated.

4. Fill the Muffin Tin:

  • Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

5. Bake:

  • Bake for 20-25 minutes or until the muffins are golden and firm to the touch. You can test by inserting a toothpick in the center—if it comes out clean, they’re ready!

6. Cool and Serve:

  • Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
