Savory Flaky Meat & Cheese Rolls 🥩🧀

These buttery, flaky rolls are stuffed with spiced ground beef, melty cheese, and caramelized peppers—perfect for snacks, parties, or a hearty side!


Ingredients

Dough:

  • 3 cups (375g) all-purpose flour

  • 1 tsp salt

  • 1 tbsp (12g) sugar

  • 1 packet (7g) instant yeast

  • ½ cup (120ml) warm milk

  • 1 large egg

  • ¼ cup (60g) butter, melted

  • ¼ cup (60g) Greek yogurt (or sour cream)

Filling:

  • 1 tbsp (15ml) olive oil

  • 1 onion, finely diced

  • 2 garlic cloves, minced

  • 300g (10.5 oz) ground beef (or lamb/chicken)

  • 1 tsp paprika

  • ½ tsp cumin

  • ½ tsp black pepper

  • 1 tbsp (15g) tomato paste

  • ½ cup (75g) diced bell peppers (red/green)

  • 1 cup (100g) shredded cheese (cheddar, mozzarella, or feta)

  • Fresh parsley, chopped

Topping:

  • 1 egg yolk (for egg wash)

  • Sesame seeds or everything bagel seasoning


Instructions

1️⃣ Make the Dough

  1. In a bowl, mix flour, salt, sugar, and yeast.

  2. Add warm milk, egg, melted butter, and yogurt. Knead for 5-7 mins until smooth.

  3. Cover and let rise for 1 hour (or until doubled).

2️⃣ Cook the Filling

  1. Heat oil in a pan. Sauté onion and garlic until soft.

  2. Add ground beef, breaking it apart. Cook until browned.

  3. Stir in paprika, cumin, black pepper, tomato paste, and bell peppers. Cook for 5 mins.

  4. Remove from heat, mix in cheese and parsley. Let cool slightly.

3️⃣ Assemble & Bake

  1. Roll the dough into a large rectangle (¼-inch thick).

  2. Spread the meat-cheese filling evenly.

  3. Roll tightly (like a jelly roll), then slice into 12 pieces.

  4. Place in a greased baking dish, cover, and rise 30 mins.

  5. Brush with egg yolk, sprinkle sesame seeds.

  6. Bake at 375°F (190°C) for 20-25 mins until golden.

  • Extra flaky? Fold the dough like puff pastry before rolling.

  • Spicy kick? Add chili flakes or hot sauce to the filling.

  • Make ahead? Freeze unbaked rolls, then bake straight from frozen (+5-10 mins).
