These buttery, flaky rolls are stuffed with spiced ground beef, melty cheese, and caramelized peppers—perfect for snacks, parties, or a hearty side!
Ingredients
Dough:

3 cups (375g) all-purpose flour

1 tsp salt

1 tbsp (12g) sugar

1 packet (7g) instant yeast

½ cup (120ml) warm milk

1 large egg
-
¼ cup (60g) butter, melted

¼ cup (60g) Greek yogurt (or sour cream)
Filling:

1 tbsp (15ml) olive oil
-
1 onion, finely diced
-
2 garlic cloves, minced
-
300g (10.5 oz) ground beef (or lamb/chicken)

1 tsp paprika
-
½ tsp cumin
-
½ tsp black pepper
-
1 tbsp (15g) tomato paste
-
½ cup (75g) diced bell peppers (red/green)

1 cup (100g) shredded cheese (cheddar, mozzarella, or feta)

Fresh parsley, chopped
Topping:

1 egg yolk (for egg wash)

Sesame seeds or everything bagel seasoning
Instructions
1️⃣ Make the Dough

In a bowl, mix flour, salt, sugar, and yeast.

Add warm milk, egg, melted butter, and yogurt. Knead for 5-7 mins until smooth.

Cover and let rise for 1 hour (or until doubled).
2️⃣ Cook the Filling

Heat oil in a pan. Sauté onion and garlic until soft.

Add ground beef, breaking it apart. Cook until browned.

Stir in paprika, cumin, black pepper, tomato paste, and bell peppers. Cook for 5 mins.

Remove from heat, mix in cheese and parsley. Let cool slightly.

Roll the dough into a large rectangle (¼-inch thick).

Spread the meat-cheese filling evenly.

Roll tightly (like a jelly roll), then slice into 12 pieces.

Place in a greased baking dish, cover, and rise 30 mins.
