Savory Mushroom Beef Casserole

Ingredients:

  • For the Casserole:
    • 1 lb (450g) ground beef (or lean beef)
    • 1 small onion, chopped
    • 2 cloves garlic, minced
    • 2 cups fresh mushrooms, sliced (white button or cremini work well)
    • 1 can (10.5 oz) cream of mushroom soup (or use homemade for a fresher option)
    • 1/2 cup sour cream (or heavy cream for a richer texture)
    • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried rosemary (optional)
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 1/2 cups cooked rice (or pasta, mashed potatoes, or quinoa, for serving)
    • 1 tablespoon olive oil (for cooking)
  • For the Topping:
    • 1/2 cup breadcrumbs (for a crispy topping)
    • 2 tablespoons melted butter (to toast the breadcrumbs)

Instructions:

1. Prepare the Beef Mixture:

  1. Cook the Ground Beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook, breaking it up into crumbles, until browned and cooked through, about 5-7 minutes. Drain any excess fat if needed.
  2. Add the Aromatics: Add the chopped onion and minced garlic to the skillet with the beef. Cook for another 2-3 minutes until the onion becomes soft and fragrant.
  3. Cook the Mushrooms: Add the sliced mushrooms to the pan and cook for about 5 minutes, until they release their moisture and start to brown.

2. Combine the Casserole Ingredients:

  1. Make the Sauce: Stir in the cream of mushroom soup and sour cream (or heavy cream). Add the dried thyme, rosemary, salt, and pepper. Stir everything together to create a creamy sauce, and simmer for 2-3 minutes to combine the flavors.
  2. Add the Rice: Stir in the cooked rice (or your choice of starch). Make sure the rice is well coated with the creamy mushroom mixture. Taste and adjust seasoning if needed.
  3. Add the Cheese: Stir in 1/2 cup of the shredded cheese and let it melt into the sauce for a cheesy, creamy texture.

3. Assemble the Casserole:

  1. Transfer to a Baking Dish: Transfer the beef and mushroom mixture into a lightly greased 9×9-inch or 8×8-inch baking dish.
  2. Prepare the Topping: In a small bowl, mix the breadcrumbs with the melted butter until the breadcrumbs are evenly coated. Sprinkle this breadcrumb mixture over the top of the casserole to create a crispy, golden topping.

4. Bake:

  1. Bake the Casserole: Preheat your oven to 350°F (175°C). Place the casserole in the oven and bake for 20-25 minutes, or until the top is golden and crispy, and the casserole is bubbling.
  2. Optional Step: If you want a more browned top, you can place the casserole under the broiler for 1-2 minutes after baking. Just keep a close eye on it to avoid burning.

5. Serve:

  1. Let it Rest: Remove the casserole from the oven and let it cool for 5 minutes before serving.
  2. Serve: Garnish with fresh parsley if desired. Serve the casserole as-is or alongside a simple salad, steamed veggies, or extra mashed potatoes for a full meal.

Tips & Variations:

  • Use Ground Turkey or Chicken: For a lighter version, substitute the ground beef with ground turkey or chicken.
  • Add Vegetables: You can add other vegetables like peas, green beans, or carrots for more color and nutrition.
  • Make it Gluten-Free: Use gluten-free breadcrumbs or skip the topping altogether and enjoy a creamy casserole.
  • Add More Cheese: If you’re a cheese lover, feel free to add more cheese to the casserole, either in the sauce or as an extra layer on top.
  • Use Fresh Herbs: If you have fresh thyme or rosemary, feel free to use them in place of the dried herbs for a fresher flavor.

Storage:

  • Store leftover casserole in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
  • This casserole also freezes well. To freeze, let it cool completely, then cover with foil or plastic wrap and freeze for up to 3 months. Thaw overnight in the refrigerator and bake at 350°F (175°C) until heated through.

This Savory Mushroom Beef Casserole is the perfect comfort food with a creamy, cheesy, and savory filling. Whether you’re looking for an easy weeknight dinner or a meal for guests, this casserole is sure to please!
