Ingredients (Makes 8-10 tacos)

  • 2 large russet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup roasted green chiles, diced (mild, medium, or hot to taste)
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder (optional for extra heat)
  • Salt and pepper, to taste
  • Corn or flour tortillas
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
  • Optional toppings: sour cream, diced avocado, salsa, chopped cilantro, lime wedges

Instructions

  1. Prepare the Potatoes:
    • Boil diced potatoes in salted water for about 10 minutes or until tender but not falling apart. Drain and set aside.
  2. Cook the Filling:
    • Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 3–4 minutes.
    • Stir in garlic and cook for another minute.
    • Add the boiled potatoes to the skillet. Use a spatula to lightly mash some of the potatoes while leaving some chunks for texture.
  3. Add Green Chiles and Spices:
    • Stir in the roasted green chiles, cumin, smoked paprika, and chili powder. Cook for 2–3 minutes, letting the flavors meld. Season with salt and pepper to taste.
  4. Assemble the Tacos:
    • Warm the tortillas on a griddle or skillet until soft and pliable.
    • Spoon the potato-green chile mixture into each tortilla. Top with shredded cheese and any desired toppings like sour cream, avocado, or salsa.
  5. Serve:
    • Serve the tacos immediately with lime wedges on the side.

Tips:

  • Roasting Your Own Chiles: If using fresh green chiles, roast them over an open flame or under a broiler until charred. Peel off the skin, remove seeds, and dice.
  • Add Protein: For a heartier meal, mix in cooked chorizo, black beans, or scrambled eggs.
  • Make It Vegan: Skip the cheese and use plant-based sour cream or avocado as a creamy topping.
