Scotcheroo Truffles Recipe

Ingredients:

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 2 tablespoons butter
  • 1 1/2 cups Rice Krispies cereal
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips
  • 1/4 cup chocolate or butterscotch chips for drizzling (optional)

Instructions:

  1. Prepare the Truffle Base:

    • In a large saucepan, melt the butter and peanut butter over medium heat, stirring until smooth and combined.
    • Once melted, stir in the powdered sugar until fully incorporated.
    • Add the Rice Krispies cereal to the mixture and gently fold it in until evenly coated.
  2. Shape the Truffles:

    • Allow the mixture to cool slightly, then use your hands or a spoon to scoop out small portions and roll them into balls, about 1-inch in diameter. Place them on a parchment-lined baking sheet or plate.
    • Chill the truffles in the refrigerator for about 20-30 minutes to firm up.
  3. Make the Chocolate Coating:

    • In a microwave-safe bowl, combine the semisweet chocolate chips and butterscotch chips.
    • Microwave in 30-second intervals, stirring between each interval, until fully melted and smooth.
