    • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the scallops:
    • Pat the scallops dry with a paper towel (this ensures a good sear).
    • In a small bowl, mix the paprika, garlic powder, and salt. Season both sides of the scallops with this mixture.
  2. Sear the scallops:
    • Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the scallops in a single layer, making sure not to overcrowd the pan.
    • Sear for 2-3 minutes on each side, or until golden brown and cooked through. Remove the scallops from the skillet and set aside.
  3. Make the Cajun cream sauce:
    • In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for 30 seconds until fragrant.
    • Pour in the heavy cream and chicken broth, stirring to combine. Add the Cajun seasoning, smoked paprika, and red pepper flakes (if using). Simmer for 3-4 minutes, or until the sauce thickens slightly. Season with salt and black pepper to taste.
  4. Combine and serve:
    • Return the seared scallops to the skillet, spooning the sauce over them to coat. Heat for 1-2 minutes until warmed through.
    • Garnish with fresh parsley and serve immediately.
