Shoepeg Salad 🌽🥗

A crunchy, sweet-and-tangy Southern classic made with tiny white shoepeg corn, crisp veggies, and a creamy dressing—perfect for potlucks, BBQs, or as a refreshing side dish!


🍽️ Ingredients (Serves 8-10)

For the Salad:

  • 2 (15 oz) cans shoepeg corn, drained (or white corn kernels)

  • 1 (15 oz) can French-style green beans, drained

  • 1 cup celery, finely diced

  • ½ cup green bell pepper, finely diced

  • ½ cup red onion, finely diced

  • 1 (4 oz) jar pimentos, drained

For the Dressing:

  • ½ cup mayonnaise

  • ½ cup sour cream

  • 2 tbsp apple cider vinegar

  • 2 tbsp granulated sugar

  • ½ tsp salt

  • ¼ tsp black pepper

  1. Prep Veggies:

    • In a large bowl, combine corn, green beans, celery, bell pepper, red onion, and pimentos.

  2. Make the Dressing:

    • In a separate bowl, whisk mayonnaise, sour cream, vinegar, sugar, salt, and pepper until smooth.

  3. Combine & Chill:

    • Pour dressing over veggies and toss gently to coat.

    • Cover and refrigerate at least 4 hours (or overnight) for flavors to blend.
