Shrimp and Grits

Ingredients:

For the Grits:

  • 1 cup stone-ground grits (or quick-cooking grits)
  • 4 cups water or chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste

For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 4 slices bacon, chopped
  • 1 tablespoon olive oil (if needed)
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bell pepper (red or green), diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 2 tablespoons fresh lemon juice
  • Chopped green onions or parsley for garnish

Instructions:

  1. Prepare the Grits:
    • In a medium saucepan, bring water or chicken broth to a boil. Slowly whisk in the grits, reducing heat to low.
    • Cook, stirring frequently, until thickened (about 15-20 minutes for stone-ground or 5-7 minutes for quick-cooking).
    • Stir in the cheddar cheese, heavy cream, and season with salt and pepper. Keep warm.
  2. Cook the Shrimp:
    • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
    • If needed, add olive oil to the skillet. Sauté the onion, bell pepper, and garlic in the bacon drippings until softened (about 5 minutes).
    • Add the shrimp, smoked paprika, cayenne, salt, and pepper. Cook until the shrimp are pink and opaque (about 3-4 minutes).
    • Stir in the lemon juice and cooked bacon, mixing well to combine.
  3. Serve:
    • Spoon the cheesy grits onto plates and top with the shrimp mixture. Garnish with chopped green onions or parsley.
