Shrimp and Sausage Foil Packet Dinner

Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 lb (450g) smoked sausage, sliced into 1/2-inch pieces
  • 2 bell peppers (any color), chopped
  • 1 large red onion, chopped
  • 2 cloves garlic, minced
  • 2 ears of corn, cut into 4 pieces each
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Fresh parsley or cilantro, chopped (for garnish, optional)
  • Lemon wedges (for serving, optional)

Instructions

  1. Preheat the grill or oven:
    • If grilling, preheat the grill to medium-high heat (about 375°F/190°C).
    • If baking, preheat the oven to 400°F (200°C).
  2. Prepare the foil packets:
    • Tear off 4 large sheets of heavy-duty aluminum foil (about 12×18 inches each).
  3. Combine the ingredients:
    • In a large bowl, toss together the shrimp, sausage, bell peppers, red onion, garlic, and corn pieces.
    • Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, onion powder, oregano, salt, black pepper, and cayenne pepper (if using). Toss to coat evenly.
  4. Assemble the packets:
    • Divide the mixture evenly among the 4 foil sheets. Fold the foil over the ingredients and seal the edges tightly to create packets.
  5. Cook:
    • Grill method: Place the foil packets on the preheated grill and cook for 12-15 minutes, flipping halfway through, until the shrimp are pink and opaque and the vegetables are tender.
    • Oven method: Place the foil packets on a baking sheet and bake for 20-25 minutes, or until the shrimp are cooked through and the vegetables are tender.
  6. Serve:
    • Carefully open the foil packets (steam will escape). Garnish with fresh parsley or cilantro and serve with lemon wedges on the side.

Tips

  • Add potatoes: Include diced potatoes for a heartier meal. Just increase the cooking time slightly.
  • Customize the seasoning: Use Cajun seasoning, Old Bay, or your favorite spice blend for a different flavor profile.
  • Make it ahead: Assemble the foil packets ahead of time and refrigerate until ready to cook.
