Shrimp Baked Potatoes Recipe

Ingredients:

  • 4 large russet potatoes
  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/4 cup cream cheese, softened
  • 1 cup shredded cheddar cheese (divided)
  • 1 teaspoon Old Bay seasoning (or your favorite seafood seasoning)
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

1. Bake the Potatoes:

  • Preheat your oven to 400°F (200°C).
  • Pierce each potato several times with a fork and rub with olive oil and salt.
  • Place them directly on the oven rack or on a baking sheet and bake for about 45-60 minutes, or until tender when pierced with a fork.

2. Cook the Shrimp:

  • In a skillet, heat olive oil over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the shrimp, Old Bay seasoning, salt, and pepper. Cook for about 3-5 minutes, or until the shrimp are pink and opaque. Remove from heat.

3. Prepare the Filling:

  • In a mixing bowl, combine the cooked shrimp, sour cream, cream cheese, and half of the shredded cheddar cheese. Mix until well combined.

4. Assemble the Potatoes:

  • Once the potatoes are done, remove them from the oven and let them cool slightly.
  • Carefully cut each potato in half lengthwise and scoop out a small portion of the insides to make room for the filling.
  • Fill each potato half with the shrimp mixture.

5. Add Cheese and Bake:

  • Sprinkle the remaining cheddar cheese on top of the stuffed potatoes.
  • Return the potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

6. Serve:

  • Garnish with sliced green onions and fresh parsley if desired. Serve warm.
